"50 Ways to Change the Way You Think about Healthy Eating" by Michele Cherry is a spectacular, no-frills cookbook that details healthy and innovative meals from breakfast all the way through midnight snack. Any level of home cook can find doable and appetizing recipes. For the healthy-eating gourmand, there is Gazpacho as well as crab cakes with homemade mustard sauce. For the less experienced, Cherry offers a healthier pimento cheese spread and flavorful tomato soup. The cookbook primarily features common household ingredients, but in some cases Cherry offers substitutes for less healthy options. Soy flour is substituted for standard flour in her fried chicken recipe, and regular sugar is frequently exchanged in favor of Splenda.
I really enjoyed "50 Ways to Change the Way You Think about Healthy Eating" and I am excited to find healthier versions of things I already cook. I already have a favorite recipe for hummus and homemade pizza crust (both featured in the book), but Cherry’s versions are healthier and more innovative. The only thing some readers might find frustrating about this book is that it is not quite clear how many servings each recipe makes. Some are clearly meant for a single person, while others appear to be able to feed a family. The greatest feature of this book is the dessert section. Cherry’s ideas for truly healthy and delicious desserts are as unexpected as they are appetizing. She presents a lemon lime slush as well as oatmeal chocolate chip cookies that are cooked on a griddle (think cookie-pancakes!). Still not sold? I’ve got three words for you: Healthy Chocolate Gelato.
