There’s no shame in using leftovers. In an era that supports recycling, it only makes sense to ‘recycle’ what’s left from one meal and re-create it into another meal. Many of us grew up on weekend feasts that evolved into weekly leftover casseroles. I know I did. All it involved was my Mom’s ingenious creativity and our combined healthy appetites. Amy Raines has created another recipe booklet to inspire cooks to feed their families on a low-income budget. Low & Set Income Family Budget Cook Book Volume 2: Holidays & Celebrations is a collection of recipes for, as you guessed, the holidays. Once again, as in Volume 1, the author introduces her idea behind this collection, pointing out that leftover meals are nothing to be ashamed of.
Low & Set Income Family Budget Cook Book Volume 2 starts with the main feast meals: stuffed turkey and cooked ham. Then it progresses to ideas and inspirations on how to use what’s left over. Each recipe is well laid out, beginning with the list of ingredients, followed by detailed instructions on how to prepare the dish. The selection includes main course meals as well as desserts and appetizer treats. There are also some helpful tips on various recipes, like how to safely store (and for how long) both before and after cooking. Main course leftover creations include recipes like Sweet and Tangy Thanksgiving Turkey, Lover’s Lane Open Face Sandwich and Lover’s Lane Brunch Salad, while sweet creations include Hand Rolled Chocolate Rum Balls, Graham Treats, Dessert Cherry Filled Cake, and Pumpkin Spice Fruit Dip. This is an interesting and useful collection of recipes from Amy Raines.
